Also known as coquelet, rooster and long leg chickens, our cockerels are pasture-raised in small batches, like the old days. They enjoy a diet of organic feed, fresh grass and a cocktail of insects and water from our well. They are grown on our small farm in Oglethorpe County and are processed at a USDA inspected facility. Cockerels are meaty birds with strong flavorful; cook them longer to make the meat softer. They are excellent for French dishes, soups and stews.
