Our guinea fowls are pasture-raised in small batches, like the old days. They enjoy a diet of organic feed, fresh grass and a cocktail of insects and water from our well. They are grown on our small farm in Oglethorpe County and are processed at a USDA inspected facility. Guineas are a delicacy in many countries around the world. These meaty birds are dark in color; cook them longer to make the meat softer. They are excellent for French, African, and Caribbean dishes.
